My Sausage Roll Recipe



Living with a child with food allergies is hard. There are always the worst-case scenario thoughts that we sometimes refuse to believe it could happen to us as parents of a child with food allergies. Unfortunately it is a reality and being very cautious everyday with food avoidance is a difficult task. Everyday cooking becomes a challenge. I have learnt to cook differently to accommodate for these allergies. I now have a collection of recipes which are mainly past down our families that are suitable for my little Munchkin.

I try to keep things interesting for him during meal times and sometimes I create dishes that are a complete disaster that I don’t think the cat would even eat it, and other times I feel a great deal of satisfaction. Here is a recipe my little Munchkin loves.

My Little Munchkin's Lunch of Sausage Rolls


European Sausage Rolls

Ingredients
500 grams of veal mince
500 grams of pork mince
1 large red onion
½ cup of breadcrumbs
¼ cup of fresh basil (chopped)
¾ cup of semi dried tomatoes in oil
2 tablespoons of tomato paste
5 sheets of puff pastry

1.                In a large size bowl place onion, basil, semi dried tomatoes and tomato paste. Using a hand held blender blend all these ingredients together until it forms a paste.

2.             Add the veal mince and pork mince and combine all ingredients.

3.             Cut the pastry in half lengthways. Place equal amounts of the mince mixture along the centre of each pastry sheet. Roll pastry to enclose filling.

4.             Preheat oven to 180 degrees Celsius. Line oven trays with baking paper.

5.             Cut each roll into 4 pieces, place roll with seam side down on trays. Bake for about 30 – 40 minutes.

The good thing about this recipe is you can freeze it. Just follow the instructions up to the end of 3 and wrap with cling wrap followed by aluminium to ensure no air gets in.

  2. Yes. There is a store called The Gluten Free Store. They sell Gourmet Gluten Free Puff Pastry. There website is www.glutenfreeshop.com.au otherwise they are located at 553 North Road, Ormond Victoria. They have a wide selection on their website and are able to deliver.
